Description

This lot is 100% Bourbon from 2 of Los Rodriguez 7 farms in Samaipata – Tacu and Trapiche.

The farms are located between 1,500 & 1,650 masl with shading of native trees and patches of wild forest, which help conserve the natural biodiversity in the farms.

After floating, the cherries are fermented for 40 hours, the parchment is then dried in the same dryers used to dry cocoa. This is an interesting cup of both sweet & sour notes, leading with tamarind which rounds off nicely to notes of sweet ripe nectarine.
