A Mexican coffee with flavors of almond and caramel, delicious!
Las Cotorras coffee is cultivated in the highlands of the state of Chiapas, where the Triunfo Biosphere Reserve is located. As you travel through the remote highlands, you can observe a species of bird of incredible beauty. These birds are called Cotorras and find their ideal habitat in the coffee farms that produce the amazing coffees of the Chiapas highlands. Although these birds can be seen in many parts of the world, the Cotorras is endemic to Mexico and many are found in the Chiapas jungle. In the region, these birds are not only known for their preference for a ‘coffee land’ nesting habitat, but also for being a symbol of authenticity and freedom.
In this region, you can witness the juxtaposition of southern and northern species, which are attracted by the natural richness of the region. The El Triunfo Biosphere is a protected area of almost 120,000 hectares. It represents the very last cloud forest in Central America, where natural condensation is trapped by the forest, giving life to a large number of plant and animal species. In this region, we have worked with communities of very small coffee producers, members of cooperatives in the region that produce organic and high quality coffee!
