Las Lajas

“Necessity is the mother of invention”. For the Chacón family, necessity was certainly the driving force in 2006 when Oscar and Francisca Chacón decided to build Las Lajas, the first specialty coffee cooperative in Costa Rica. Today, Las Lajas is an example for all cooperatives making specialty coffee in Costa Rica.

Before this project, the Chacón family depended on multinationals to process their coffee and could not make ends meet.

For the past 10 years, the Chacón family has focused on reducing their environmental impact and offering exceptional coffees. The family’s farm is certified organic and Las Lajas is recognised for its mastery of the natural and honey method. They have participated in several Cup of Excellence awards. For this particular coffee, they have used brix measurements to ensure that only coffee cherries with a high sugar content are kept.
