Description

In the Apaneca Mountains on the border with Guatemala, the Guillen family is now the fifth generation to grow coffee.

On the 16ha Finca La Dalia, this Pacamara grows at an altitude of 1500m on an area of 7ha.

Immediately after picking, the cherries are first peeled and then fermented with the pulp in barrels for 24 hours in a cold store at 8 degrees Celsius and then dried on African Beds for 23 days.

The result is a very complex, super transparent, sweet and fruity coffee with notes of honeydew melon, currant and elderberry.
